Bean flour can do more than akara and moin-moin! You can use it to make an egg-free French toast. The bananas in the batter mimic the springy texture of French toast made with eggs; and they also provide enough sweetness to mask the taste of the beans.

Pair your toast with an eggless scrambled omelette made with tofu to round out your protein rich, cholesterol free breakfast!

For the toast
 6 slices wholewheat bread (preferably stale)
 1 cup bean flour
 1 large very ripe banana
 1 tsp vanilla extract
 1 cup water or plant milk
 2 tbsp coconut oil
 1 tbsp brown sugar (optional)
For the 'scrambled omelette'
 1 cup crumbled firm tofu
 1 cup mixed chopped vegetables of choice (e.g. mushrooms, tomatoes, bell peppers, onions, garlic)
 1 tbsp olive oil
 2 tsp soy sauce
 0.50 tsp each of curry powder, turmeric powder, chili powder, thyme and black salt (optional)
 salt to taste

To make the French toast

Mash the banana and add the rest of the ingredients, plus enough water/milk to form a thick batter. Mix thoroughly. Cut the crusts off the bread slices if you prefer

Pour some of the batter into a flat plate; press a slice of bread lightly into it to coat with the batter. Flip the slice over to coat the other side

Cook the slice in a non-stick pan; no need to add oil. Fry for about 3 minutes on each side, and only flip when the slice readily lifts off the pan. Place the toast in a warm oven while you do the rest

To make the 'scrambled omelette'

Add the chopped veggies and olive oil to a dry non-stick pan. As the pan heats up, add the soy sauce and spices plus about a tablespoon of water and leave to simmer about 3 minutes

Add the crumbled tofu (simply crumble a block of tofu between your fingers) to the pan and stir well to incorporate the spices. Cover the pan and let simmer another 5 minutes
